So, chiming in, it's an intended change due to PvP - Some smarmy player realized that you can build storehouses/houses/whatever over dead huntables, cancel it as soon as the villager taps it, and you delete said huntable, thus denying the enemy 150 food for the low low cost of 1 wood. Repeat it on all their huntables, and you get pretty insane value, multiple thousands of food just gone and at best you risk 1 villager, especially when its done at the start of the game and can't be easily countered.
So, yea, you can blame that smarmy PvP player for this drop in PvE QoL.
Personally, I wouldn't mind it IF deer AI got turned off on all PvE maps, so they just stand perfectly still and let you kill them all neatly and orderly like.
