Offline mode

I understand that offline mode allows us to play custom-made quests. Would it also allow us to replay standard quests just for fun ??? For example, would Celeste allow us to play the dozens of standard quests that were recreated under Penelope ??? Every now and again, it's fun to replay echo canyon slaughter in Egypt. Just curious.
